Wouldn’t spend more than 20 min of a practice session on just exercises. Practicing techniques is going to help me learn my repertoire pieces. At the same time I balance my learning with interesting pieces. Of course technical exercises are important. Last year I played “What a Wonderful World”. I downloaded a version of “Memory” from Andrew Lloyd Webber “Cats” and I got “My Heart Will Go On” theme from “Titanic”. I wouldn’t limit myself to scale & arpeggios exercises and the teacher’s assigned pieces. When I hear an interesting piece on the radio like “when You Wish Upon a Star”, I’d find a piano arrangement online. When I started piano as an adult, I was aware the need to find repertoire pieces to keep me engaged.
